Sun Basket Review Meal #3

In case you missed the first post in this series, I decided to give a few meal delivery subscription services, Plated, Hello Fresh, Blue Apron, Home Chef a try and see how they worked out. Home Chef Meal Review #3: Quinoa Fritters with Arugula Strawberry Salad

Minimal– a little veggie prep and cooking of the quinoa.

I started the quinoa cooking, and meanwhile prepped the other ingredients for the fritters.

Then, I prepped the salad and dressing ingredients.

I had some time to kill waiting for the quinoa to finish cooking, but when it was done and cool enough, I mixed it in with the other ingredients that were already prepped and formed into patties.

The fritters cooked up quickly in a pan, and I dressed the salad.  Two notes about this picture– 1) You’ll notice that the salad green pictured is spinach, not arugula as the recipe title suggests.  My own fault– the arugula from Sun Basket was beautiful when I received it, but I didn’t have time to make this meal before it wilted.  I had spinach in the fridge, and substituted it.  And, 2) This recipe also included a Yogurt-Tahini sauce for the fritters.  It was delicious, but I forgot about putting it on for the picture.

Easy, easy.  About 35 minutes start to finish, but I had periods of downtime throughout that I could do other things in the kitchen.


The quinoa fritters were tasty and very filling, and the yogurt-tahini sauce was the perfect compliment.  Though dressed simply, the salad was yummy as well.

Serving Size:

2 adults without leftovers

Overall impression:

Healthy, tasty, and something I wouldn’t ordinarily make at home.
